BERJAYA TIMES SQUARE HOTEL, KUALA LUMPUR REACHES OUT TO CHILDREN IN NEED



In the spirit of volunteerism, 30 associates from Berjaya Times Square Hotel, Kuala Lumpur recently headed to Pusat Jagaan Anak Yatim dan Miskin Nurul Iman to refurbish the home and to spend some quality time with the children residing there.

Berjaya Times Square Hotel, Kuala Lumpur’s Corporate Social Responsibility program (CSR) for the month of September was championed by the hotel’s housekeeping department. The hotel associates arrived at the home at 9am, ready to assists in reparations work and to brighten up the children’s day. After a sumptuous breakfast feast prepared by the hotel for the children, the group of 30 were divided up into three main groups due to the amount of work needed to be completed for the day.

The mold stains on the wall were scrubbed clean before given a fresh coat of white pain, brightening up the exterior of the house. The second team repaired the gate outside which had been out of order for  some time and replaced the burnt out light bulbs in the house so that the children would be able to study at night without straining their eyes. The third team on the hand, focused solely on repairing the cracks on the ceiling which had been damaged due to heavy rain over the years.

The repairs and renovation works ended around 3 pm and the cake- cutting ceremony took place shortly after. The delicious chocolate cake topped with powdered sugar icing specially made by the hotel’s pastry team was a delightful surprise for the children.

The hotel also donated important household necessities such as detergent and soap to the home which goes through these items very quickly due to the large number of children currently residing there.

“We have always been a big supporter of the local orphanages and have been to several different orphanages in the past for our Corporate Social Responsibility (CSR) programmes. Hello Kitty Gourmet Cafe, Sunway Pyramid

Hello Kitty Gourmet Café is the first of its kind in Malaysia and fans are delighted since its opening since few months ago. Dishes that bear the character’s appearance. So prepare yourself for a cuteness overload! Located at the ground floor of Oasis Boulevard at Sunway Pyramid, 

Inside the café, you’ll find walls adorned with adorable Hello Kitty paintings that complement the cheerful, comfortable pastel chairs that of course, also feature an emblem of the White Kitty.

What about the food you ask? Well, among others, there’s Grilled Salmon with Asparagus, Cherry Tomatoes and Hello Kitty-shaped Potato Slices, Crispy, Hello Kitty-shaped Aubergines with chocolate drizzle, Grilled duck and mango salad as well as desserts like Hello Kitty Waffles and Strawberry and Chocolate Churros.

As a fan of Hello Kitty, I visited the cafe just a few days ago. I enjoyed the photography opportunity I have in the cafe. Maybe due to the furniture colour selection to go along with them in pastel colours, it is now not so pleasant in look. The chairs are stained and it gave me a little bit of not so pleasant view and feeling to sit on. 

While waiting for your food to arrive do explore the cafe on both floors to see the selection of cakes, candies and macaroons available.

If you are taking photos of the interior, maybe you could be done with just one time visit required. Unless the food served are extremely good for return visit. I ordered the strawberry cheesecake, however, the quality got nothing to shout about. 

The advice will be better if they have their sofas and cushion changed or cleaned, so that fans may return back more often for catch-up or coffee.

Dark Chocolate Red Wine Cupcakes Recipe

Starting today onwards, I will be sharing on a range of liquor cupcakes from time to time. Now, cupcakes are not only for kids; it for adults, especially these liquor cupacakes. Believe me people! This cake is insane. It is hard to imagine how a chocolate flavor so intense can fit inside such a dense and fudgy yet surprisingly tender little cake.

For the Cakes
2 stick (225gram) of softened butter
2 cups firmly packed dark brown sugar
2/3 cups granulated sugar
4 eggs
2 cups red wine of choice
2 tsp. vanilla extract
2¾ cups all-purpose flour
1 1/3 cups cocoa powder
½ tsp baking soda
1 tsp baking powder
¾ tsp cinnamon
¾ tsp salt

For the Frosting 
8 oz softened cream cheese
¼ cup heavy cream
1½ cups powdered sugar
¼ tsp vanilla extract
a pinch of salt


Preheat your oven to 325 degrees and place cupcake liners in 2 cupcake tins. Beat the softened butter at a medium speed in an electric mixer until smooth. Add the sugars, increase the speed to medium-high, and beat until fluffy. Add the eggs, one at a time, and then add the vanilla. Once everything is incorporated, give the bowl a scrape to loosen up the stuck bits at the bottom.

While things are mixing, sift together the flour, cocoa powder, baking soda, baking powder, cinnamon, and salt in a separate bowl and set aside. Also measure out your red wine.

Add 1/3 of the dry mix to the mixer with the butter and sugar and beat on low until the flour is just incorporated. Then, add in half of the red wine and mix to combine. Continue by adding another third of the dry mix, then the rest of the wine, and finally the rest of the dry ingredients. Mix until the ingredients are incorporated together and the batter is smooth.

Scoop the batter into the muffin tins (about 3 Tbs or an ice cream scoop-full in each) and bake for 25 minute or until a toothpick inserted in the middle comes out clean.

As the cupcakes cook, make the frosting. Using an electric mixer with the whisk attachment, whip up the cream cheese on a medium speed until smooth. Add the powdered sugar, vanilla and salt, and whisk to combine. Increase the speed and slowly pour in the heavy cream. Once added, whip on high for about a minute until the frosting is increased in volume and has the texture of marshmallow fluff. Store in the refrigerator until ready to use.

When the cupcakes are finished baking, invert them onto a cooling rack. Wait until they are completely cool before topping with a small dollop of the frosting or a dusting of powdered sugar. Store in the refrigerator – they will keep well for about 3 days.

Totoro Black Sesame Chiffon Cake

Ever since I came across Bento Monsters recipe on what she did for her kids, I fall in love with her beautiful work and her generous heart in sharing her recipe. Recipe I share from her will only be those I think I am able to do.

I love black sesame and I felt that it is easy to decorate this cake; that’s the reason I am sharing this. Being a lazy bum, I buy ready-made pandan or orange chiffon cake from bakery and I don’t mind a green or orange Totoro.

BLACK SESAME CHIFFON CAKE

Ingredients:
3 egg yolks
20g caster sugar
30ml fresh milk
20ml corn oil
30 g black sesame paste
48g cake flour
1/2 tsp salt
1/2 tsp baking powder

Meringue Batter:
3 egg whites
40g caster sugar
5g cornflour

Whipped cream:
50g heavy cream
5g castor sugar

Method:


1.    Beat egg yolks, caster sugar, and salt over a water bath until the sugar and salt have completely dissolved, and the egg yolks are creamy. 
2.    Add in black sesame paste and milk to the egg yolk mixture and continue to mix them well over the water bath. Leave to cool down, stir in oil.

3.    To make the meringue, beat the egg whites with a mixer on low speed until they become white and frothy. Gradually add the sugar and cornflour in intervals and beat until stiff peaks have formed. 
4.    Add 1/3 of the meringue to the egg yolk mixture and mix well. 
5.    Sift in the cake flour and baking powder and mix to combine. 
6.    Fold in the rest of the meringue. 
7.    Transfer to a 5 inch chiffon cake mould. Tap against the table to allow air bubbles to escape.
8.    Bake in a preheated oven at 170C for 20-25 minutes. Remove and rest the cake tin upside down. Make sure it is completely cool before unmouldng.
9.    For decoration, beat the heavy cream and sugar until soft peaks form. 
10. Frost bottom half of chiffon cake. 
11. Place a little whipped cream in pipping bag and pipe out Totoro's eyes.
12. Use melted chocolate to pipe on eyes, nose, whiskers, and details on its stomach. 
13. Make small incisions on the side of the cake for its ears. Use almond and dip the ends in as 'glue' and attach the ears.
